Our Artisan Cheeses are constantly transforming because they are a true reflection of when and what grasses our cows are eating. Depending on the seasons the cows may be eating different types of grasses with higher or lower moisture content.

Uses: Melts well. Macaroni and Cheese. Quesadillas. Grilled Cheese Sandwiches/ Burgers. Omelets. Fondue. Dishes Au Gratin. Great with a Cabernet Sauvignon.
TURPIAL CHEESE
Suspended at room at temp 60 days+ marinated in extra virgin olive oil.
Profile: Texture, flavor and subtleness like a Swiss cheese. Although made with temperatures under 100 degrees, keeping all enzymes intact, alive and thriving.
Creamy & buttery with subtle tartness.
ARAGUANEY CHEESE
Suspended at room at temp 60 days+ marinated in extra virgin olive oil.
Profile: Creamy and dry, buttery with subtle tartness, salty.
Full Cream, mid moisture (Farmer's Cheese), almost buttery flavor and a subtle tartness.
This cheese is perfect for frying or searing. Make sure you have a nonstick pan, already hot before placing the cheese slices on it. Flip when golden brown.
