Dos Lunas Artisan Cheese
Dos Lunas is a specially aged raw cow’s milk cheese, vegetarian from vegetable rennet and Non GMO.
Our Milk is 100% from A2/A2 Cows.
All our practices are beyond Organic. We have chosen not to get organic certified do to the high cost for the entire farm to get certified organic by the FDA.
Stryk Jersey Farm raw milk, which is the only milk we make cheese with, is a farm that has had what is known as a “Closed Herd of Jersey Cows” since the 1950’s. Meaning since then the Stryk family has not brought a single cow into that farm that has not been born there from the same lineage of the same herd.
Because there are 15-20 new cows (from their herd) pregnant and ready to be milked and every year Bob and Darlene sell off their 15-20 of their oldest cows to many different families who want a milking cow for their family Farm.
This has been happening for over 5 decades.
And on a regular basis for the past 15 years people who buy these cows, run tests to confirm the health of the cow and also to know if they are A2/A2. As no surprise to Bob and Darlene Stryk, every single cow tested, without exceptions of course, have turned out to be very healthy and an undeniable A2/A2 Jersey cow.
So in short, yes, 100% of the milk from Stryk Jersey Farm is A2/A2 100% grass-fed cow’s raw milk.
That is just a few of the reasons we why we carefully chose Stryk Jersey Farm as our only source of milk to make our cheeses at Dos Lunas Cheese.
