Our Artisan Cheeses are constantly transforming because they are a true reflection of when and what grasses our cows are eating. Depending on the seasons the cows may be eating different types of grasses with higher or lower moisture content.

This and its cage aged counter part “Alda” are our only cheeses with animal rennet.
Half Cream, High moisture (Farmer's Cheese). Fresh and uniquely dense with a light finish
Uses: Seared Especial covered with Honey and Nuts/Fruit. Best seared on a Griddle or Cast Iron at a High Temperature. Grates well. Works well in an onion soup. Cubed in Salads. Pairs with a light Chardonnay.
